SMOKEY CHICKEN

 INGREDIENTS per person

 1CHICKEN FILLETS

1/2 ONION

1/4 RED PEPPER

1 CLOVES GARLIC

1 SLICE RINDLESS SMOKEY BACON

100 MLS PASSATA

TEASPOON SPOON TOMATO PUREE

100MLS VEGETABLE STOCK

PINCH OREGANO

1 TEASPOONSPOON OLIVE OIL

1/4TEASPOON SMOKED PAPRIKA

50G Pasta/ Rice ( uncooked weight)

 

1 Protein/ 2 Fruit & Veg/ 1 Fat portion

 

 

 

METHOD

  1. Dice the Chicken Fillets and Bacon into 1 inch pieces
  2. Fry in  Olive Oil for 5 minutes
  3. Add Onion, Pepper and Garlic
  4. When Chicken is browned add in Paprika and toss.
  5. Add Stock, Passata and Herbs.
  6. Cover and simmer for 10 minutes.
  7. Can serve with Rice or Pasta or Baby Potatoes
